To celebrate all of our littles going back to school, we’re finishing this week off with homemade granola bars!
1 1/2 cup oats (Red Mill GF Oats)
1 cup granola (Udi’s GF)
1 tsp salt
2 tsp vanilla
2 tblsp softened butter
1/2 cup brown sugar
1/4 cup honey/agave (we used some of each)
Toppings (m&m’s, raisins, craisins, dried fruits, GF chocolate chips)
Bread pan (thick bars) or 9Ã—15 (thin slices & easier for kids to eat!)
Toss granola and oats together.
Pour honey and brown sugar into a pot and boil. Once the mixture bubbles on the outer edges, boil exactly 1 minute longer while stirring.
Remove from heat, stir, and add into oats and granola. Add buttee. Stir until all of your oats are covered.
Oil your pan with coconut oil and spoon honey-granola mixture into your pan.
Oil your spatula and press HARD onto your mixture making it flat! (We turned our granola bars onto a piece of wax paper before adding toppings to make sure it was pressed enough and then placed it back into the pan for toppings!)
Press toppings into your bars while still squishy. Let sit 5 minutes and turn granola sheet onto wax paper, slice, & serve!
Don’t refrigerate and eat within 3 days.
